
Health experts from nubella.com say Thanksgiving is the top holiday for food related illnesses. Bacteria that is most common for causing disease, usually doesn't change the smell or appearance of your food, so you need to always think about it during preperation.
- Wash your hands thouroughly before and after preparing.
- Thaw the turkey in the refrigerator set below 40% for several days becuase other thawing methods will enhance growth of bacteria.
- If pressed for time, thaw your wrapped turkey in a sink filled with cold tap water, but be sure to change the water every half-hour.
- Cook stuffing in a seperate baking dish or pan to ensure it cooks completely. When stuffing is inside the turkey, it may take hours for it to heat to proper temperature.
- Test all foods with a thermometer. A whole turkey should reach 180% in the thighs, stuffing should reach 165%.
- Beware of leaving food out too long during buffet or potluck. After two hours, food can start to form harmful bacteria that will multiply rapidly.
- Refrigerate all left-overs as soon as the meal is completed.
Also, left-overs should only be kept in the refrigerator for three to four days.
