
I gave the Pork Chop Potato Dinner a shot as planned and it turned out very well. (Thank goodness!) I do believe the menfolk are looking forward to having it again sometime soon, in fact. Here's my contribution for this week's Slow Cooking Thursday:
Creamy Italian Chicken (from Taste of Home's Slow Cooker Recipes 2007) and Spaghetti:
What You Need:
- Spaghetti or pasta of your choice, to serve four (I plan to use whole-wheat spaghetti, a family favorite)
- 4 boneless skinless chicken breast halves (4 oz each)
- 1 packet Italian salad dressing mix
- 1/4 C water
- 1-8 oz package cream cheese (softened)
- 1-10 3/4 oz can condensed cream of chicken soup (undiluted)
- 1- 4 oz can mushroom stems and pieces (drained)
- fresh oregano leaves (optional)
What To Do:
- Put chicken breasts in 3-quart slow cooker.
- Combine salad dressing mix with water; pour over chicken.
- Cover and cook on low for 3 hours.
- In separate bowl, beat together cream cheese and soup until blended.
- Stir mushrooms into soup mixture; pour over chicken.
- Re-cover and cook on low for 1 hour (or until chicken juices run clear).
- Prepare pasta; when chicken is ready, serve over pasta.
- Garnish with oregano if using.
