
Thanks to Rona of Berry-Morin's Bits and Tips, I just found out about Slow Cooking Thursday, hosted by Sandra over at Diary of a SAHM. Whether you're a Workerette juggling a job outside the home, an at-home mom, a work-at-home mom or all of the above *yikes!*, you've probably wondered if a slow cooker would be useful for you. I'm personally learning that the answer is a resounding YES! Even if you aren't a mom (or perhaps, are a gramma or great-gramma), planning ahead can only be a good thing. It makes the budget a little less likely to break, the days a little more efficient, and with recipes like the ones these ladies are sharing, it can make dinner healthier and/or tastier! Here's my contribution to Slow Cooker Thursday; I'll be using this recipe to feed my husband and one of his friends, both of whom are always "down" for a good home-cooked meal of meat (of any sort) and potatoes!
Pork Chop & Potato Dinner (from Taste of Home's Slow Cooker Recipes 2007, pg. 130):
What You Need:
- 6 bone-in pork chops
- 1 T vegetable oil
- 1-30 oz. package frozen hash browns, thawed
- 1.5 C shredded cheddar cheese
- 1-10 3/4 oz can condensed cream of celery soup (undiluted)
- 1/2 C milk
- 1/2 C sour cream
- 1/2 tsp seasoned salt
- 1/8 tsp pepper
- 1-2.8 oz can french-fried onions (I'm leaving these off)
What To Do:
- Brown chops on both sides in a large skillet. Set aside and keep warm. Combine potatoes, 1 C cheese, soup, milk, sour cream, seasoned salt and pepper in a bowl. Stir in half the onions if using them.
- Place mixture in a greased 5-quart slow cooker. Place pork chops on top of potatoe mixture. Cook on high for 2.5 to 3 hours (until meat juices run clear).
- Sprinkle with remaining cheese and onions, if used. Cover and allow to cook for 10 more minutes or until cheese is melted.
Something tells me that the guys will be devouring this and enjoying leftovers on the weekend!
