Every Workerette knows how important it is to plan ahead and try to streamline things like grocery shopping, meal preparation, and kitchen storage in order to (hopefully!) add a few more minutes to the day. Whether you're a single Workerette trying to plan things out so you'll eat something other than fast food, a working mom with a large family at home, or an empty nester ready to really relish your time in the kitchen, Menu Plan Mondays can get you started. I've learned a lot from the other ladies who participate, and hopefully I can pass on a few suggestions here on my own as well.
Here's what's cooking in my kitchen this week:
- Monday: Grilled Chicken & Mozzarella Ravioli with Eggplant
- Tuesday: Lemon-Pepper Tilapia with Spinach
- Wednesday: Mediterranean Chicken with Vegetables
- Thursday: Leftovers/sandwiches
- Friday: Buffalo Spaghetti
- Saturday: Grilled Teriyaki Chicken
- Sunday: "Breakfast Dinner" (pancakes & scrambled eggs)

Um....so tonight's is the stuff from Costco, huh? That sounds soooo good! I definitely need to make it up there!
