Slow Cooking Thursday: Feeling Spicy?

As I promised over at SmallBizMentor earlier this week, here's the recipe for Three-Bean Turkey Chili, courtesy of Quick and Simple.

Three-Bean Turkey Chili:

What You Need:

  • 1 lb. ground turkey
  • 1 small onion (chopped)
  • 1 can (28 oz) diced tomatoes, with juice
  • 1 can (15 oz) garbanzo beans, drained & rinsed
  • 1 can (15 oz) kidney beans, drained & rinsed (we chose light red beans as they were higher in fiber and several vitamins than the dark red)
  • 1 can (15 oz) black beans, drained & rinsed
  • 1 can (8 oz) tomato sauce
  • 1 can (4 oz) chopped mild green chiles
  • 1-2 T chili powder
  • optional: shredded Cheddar cheese for garnish

What To Do:

  • Saute turkey and onion (if using) in a skillet over medium-high heat until no longer pink.  Stir meat to break into crumbles.  Drain and place in slow cooker.
  • Add tomatoes, beans, sauce, chilies and chili powder.  Mix ingredients well.
  • Cover and cook for 6-8 hours on high.
  • Serve hot; try it garnished with Cheddar and next to a warm batch of cornbread.  (This is great year-round, but it sure hits the spot on a suddenly cool spring day or a crisp fall one!)
