As I promised over at SmallBizMentor earlier this week, here's the recipe for Three-Bean Turkey Chili, courtesy of Quick and Simple.
Three-Bean Turkey Chili:
What You Need:
- 1 lb. ground turkey
- 1 small onion (chopped)
- 1 can (28 oz) diced tomatoes, with juice
- 1 can (15 oz) garbanzo beans, drained & rinsed
- 1 can (15 oz) kidney beans, drained & rinsed (we chose light red beans as they were higher in fiber and several vitamins than the dark red)
- 1 can (15 oz) black beans, drained & rinsed
- 1 can (8 oz) tomato sauce
- 1 can (4 oz) chopped mild green chiles
- 1-2 T chili powder
- optional: shredded Cheddar cheese for garnish
What To Do:
- Saute turkey and onion (if using) in a skillet over medium-high heat until no longer pink. Stir meat to break into crumbles. Drain and place in slow cooker.
- Add tomatoes, beans, sauce, chilies and chili powder. Mix ingredients well.
- Cover and cook for 6-8 hours on high.
- Serve hot; try it garnished with Cheddar and next to a warm batch of cornbread. (This is great year-round, but it sure hits the spot on a suddenly cool spring day or a crisp fall one!)

This sounds like something my husband would really, really like, and it would make my hair stand on end!
