

Welcome to another edition of Slow Cooking Thursday. Have you tried out any of the other recipes available here at Workerette.com or on the other participants' blogs yet? I am still so in love with that Three-Bean Turkey Chili, myself.
I think that the slow cooker is an excellent option for busy Workerettes of all family sizes and work schedules, since you can use it for anything from meals for the family gathered around the table to treats for company functions and church get-togethers. That's why I think this Southwestern Strata would be perfect for upcoming holidays like Mother's Day or Father's Day. It takes just a few minutes to prepare, and that's done the night before! After all, even if Mom has to do the work, at least there's not much of it, right?
Here's the recipe; let me know what you think!
Southwestern Strata:
What You Need:
- 6 large eggs
- 2 C milk
- 1 tsp. salt
- 1/2 lb. cooked chorizo sausage (sliced) OR 1 - 8 oz. package cooked breakfast sausage patties (thawed and crumbled)
- 1 - 14 oz. container of fresh salsa (choose your preferred level from hot to mild)
- 1 - 11 oz. can of corn, drained
- 1 - 4.5 oz. can of chopped green chiles
- 1 C crushed corn tortilla chips
- 13 slices of firm white bread (crusts removed)
- 1 1/2 C shredded Mexican blend cheese, divided
What To Do:
- Whisk together eggs, milk and salt in a large bowl; set aside.
- Pulse sausage pieces in a food processor until coarsely ground. In a second bowl, stir the sausage, salsa, corn, chilies and crushed tortilla chips together.
- Prepare your 5 - 6 quart slow cooker with vegetable cooking spray. Tear 4 slices of bread apart and use to completely cover bottom of cooker.
- Top with half of the sausage mixture; sprinkle with 1/2 C cheese.
- Repeat with another layer of bread, the remainder of the sausage mixture, and another 1/2 C cheese.
- Create a final layer with 5 slices of torn bread.
- Pour egg mixture over the top and allow the liquid to settle, then top with the last 1/2 C of cheese.
- Cover and refrigerate overnight.
- Set slow-cooker crock back in the heating unit and cook on high for 2 1/2 to 3 hours.
