
Who feels like Fudge Pudding Cake? This tasty treat actually cooks IN THE MICROWAVE. Best part is, if you have a well-stocked pantry you probably already have all the ingredients too.
I suppose my preggo hormones have me crankin' for chocolate today, because I just had to share this with you Workerettes for the weekend. I'll give you a recipe for something a little more nutritious tomorrow too - perhaps it will all add up to a nice, fast, easy dinner party!
What You Need:
- 1 C all-purpose flour
- 3/4 C granulated sugar
- 2 T baking cocoa
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 C milk
- 2 T vegetable oil
- 1 tsp vanilla
- 1 C chopped nuts
- 1 C packed brown sugar
- 1/4 C baking cocoa
- 1 3/4 C boiling water
What To Do:
- Mix flour, sugar, 2 T cocoa, baking powder and salt in a two quart microwave safe casserole dish.
- Stir in milk, oil and vanilla, then stir in nuts. Spread evenly in casserole dish.
- Mix brown sugar and 1/4 C cocoa in separate bowl. Sprinkle over batter in dish.
- Pour boiling water over batter.
- Microwave uncovered for 9 minutes at 50% power (medium). Rotate 1/2 turn.
- Microwave uncovered for 5 -6 minutes on high (or until top is almost dry).
Serve this treat up warm with some ice cream or whipped cream. Delish!
