
How about we make something fast and easy for dinner this weekend? Five minutes worth of prep time fast enough for ya?
I love the sound of this recipe, personally. You can pull everything together in the pan while the oven preheats, then set the table and set up your sidedishes while it bakes. Or better yet, serve these babies with a simple bagged salad on the side and put your feet up while dinner cooks itself! Hmmm - I think I like that idea best!
Let's get cooking:
What You Need:
- 3/4 C dry bread crumbs
- 1/4 C grated Parmesan cheese
- 1/4 C butter or margarine (melted)
- 2 T Dijon mustard
- 6 chicken breast halves (about 1 3/4 lbs; boneless and skinless)
What To Do:
- Preheat oven to 375 degrees. Grease a 13 x 9 x 2 inch rectangular pan.
- Mix the bread crumbs and cheese in a large Ziploc-style bag.
- Mix the butter and mustard in a shallow dish.
- Dip chicken breasts in the butter/mustard mixture, then shake in the bag to coat with crumb mixture.
- Place in pan and bake uncovered for 20-25 minutes, turning once. You're done baking when the juice of the chicken is no longer pink when the centers of the thickest chicken breasts are cut!
