
Whether you're a Workerette juggling a job outside the home, an at-home mom, a work-at-home mom or all of the above *yikes!*, you've probably wondered if a slow cooker would be useful for you. I'm personally learning that the answer is a resounding YES! Even if you aren't a mom (or perhaps, are a gramma or great-gramma), planning ahead can only be a good thing. It makes the budget a little less likely to break, the days a little more efficient, and with recipes like the ones these ladies are sharing, it can make dinner healthier and/or tastier!
This week I've chosen a recipe that can be a side or a meal in and of itself. This one makes 9 servings, so smaller families will have plenty of leftovers. (You can probably hear my hubby cheering on that one, can't you?) I think this would make a good brunch addition - picture it with scrambled eggs and tortillas. Mmm. Great, now I'm hungry!
What You Need:
- 1 lb fully cooked kielbasa or Polish sausage (cut into 1/4 inch slices)
- 2 - 14.5 oz cans of diced tomatoes (undrained)
- 2 C water
- 1 1/2 C uncooked converted rice
- 1 C salsa (pick your heat level!)
- 1 medium onion, chopped
- 1/2 C chopped green pepper
- 1/2 C chopped sweet red pepper
- 1 - 4 oz can chopped green chilies
- 1 envelope of taco seasoning
What To Do (This is SO easy!):
- Combine all of the ingredients in your slow cooker and stir together.
- Cover and cook on low for 5-6 hours or until rice is tender.
