Now that I've divulged how hungry I am, I figured it would be a good time to share a recipe for a healthy little snack to tide you over while that chicken's cooking! If you've got kids, this one may be a real winner. Slice up some of their favorite fruits and let them enjoy this yogurt dip. Apples, pears, oranges and bananas are the first things that come to mind, but I can also see this drizzled on chunks of kiwifruit or used as a dip for dried papaya or mango strips as well. Give it a shot and see what combos you and your family or friends can come up with!
Gingered Caramel & Yogurt Dip
What You Need:
- 1/2 - 8 oz package of cream cheese (softened)
- 1/2 C vanilla low-fat yogurt
- 1/4 C caramel topping (plus 1-2 tsp for drizzling)
- 1 T finely chopped crystallized ginger (optional)
What To Do:
- Beat the cream cheese in a medium bowl with an electric mixer on medium speed, until creamy.
- Beat in the yogurt and 1/4 C caramel topping, until smooth.
- Cover mixture and refrigerate for at least 20 minutes.
- Drizzle with additional caramel topping and use a knife or toothpick to swirl the caramel through the dip. Sprinkle with ginger, if applicable.
- Dip away!
