
Have you ever tried one of those slushy or "Icee" drinks? They seem to really draw my daughter for some reason, but the one time she had one she ended up with "brain freeze" and a tummyache to boot! I've always assumed they are just pure sugar, dye, and ice, with nary a nutritious drop in them. (Okay, maybe the water to make the ice portion helps a bit.)
Today while we were on the first leg of our roadtrip I had an opportunity to sit back and enjoy reading the July 2007 issue of Self magazine and I spotted a recipe I can't wait to try out when we get into our new home. I would adapt it a bit though, so here's my version of their "watermelonade":
What You Need:
- 4 C seedless watermelon cubes
- 1/4 C fresh squeezed lemon juice (about the amount from 1 large lemon)
- 2 T granulated sugar
- 1 T mini chocolate chips (my addition; personally I'd choose semi-sweets)
What To Do:
- Place watermelon cubes in blender.
- Pour lemon juice on top.
- Add sugar.
- Puree until smooth.
- Gently stir chocolate chips into mixture.
- Pour into 4 glasses, over ice.
Self suggests garnishing with small, fresh sprigs of mint. This could still be fun even with my chocolate kicker. I wonder if there's a healthy way for us to make this into a Peppermint Patty type treat? Hmmm...something to ponder.
