
Whether you're a Workerette juggling a job outside the home, an at-home mom, a work-at-home mom or all of the above *yikes!*, you've probably wondered if a slow cooker would be useful for you. I'm personally learning that the answer is a resounding YES! Even if you aren't a mom (or perhaps, are a gramma or great-gramma), planning ahead can only be a good thing. It makes the budget a little less likely to break, the days a little more efficient, and with recipes like the ones these ladies are sharing, it can make dinner healthier and/or tastier!
We've still got a month to go before summer break is done for the bulk of folks, so let's pull in another great barbecue idea this week. Get your sandwich rolls ready, gals!
What You Need:
- 1 pork shoulder roast (3 to 4 lbs)
- 1 T Montreal steak seasoning
- 1 1/2 large onions, sliced
- 1 - 18 oz bottle of hickory-flavor barbecue sauce
- 2 16 oz cans whole cranberry sauce
What To Do:
- Sprinkle steak seasoning on roast and set it aside.
- Arrange onion slices in 5-quart slow cooker.
- Place roast on onions.
- In a separate bowl, combine cranberry sauce and barbecue sauce. Pour mixture over roast.
- Cover and cook on low for 8 to 10 hours.
To serve:
- Transfer cooked roast to a cutting board and tent with aluminum foil until it's cool enough for you to handle.
- While the meat cools, use tongs to move the onions to a serving dish.
- Pull or shred the roast into bite-sized pieces.
- Use a mesh strainer to strain the cooking juices into a bowl.
- Place meat on sandwich rolls if you like; serve with the onions and cooking juices.
