
Whether you're a Workerette juggling a job outside the home, an at-home mom, a work-at-home mom or all of the above *yikes!*, you've probably wondered if a slow cooker would be useful for you. I'm personally learning that the answer is a resounding YES! Even if you aren't a mom (or perhaps, are a gramma or great-gramma), planning ahead can only be a good thing. It makes the budget a little less likely to break, the days a little more efficient, and with recipes like the ones these ladies are sharing, it can make dinner healthier and/or tastier!
This week I'd like to share a recipe that will make good use of those day-old cinnamon rolls - perfect for dessert or as a brunch item the day after everyone has indulged in treats. This one takes me back to my days in retail management. On the nights that I closed the store, I noticed the folks at Cinnabon discounting their last few boxes of rolls just to get them off the shelves. If you had the right connections, they might even stop by your leaseline with freebies when all the customers had left the mall. If only I'd had this recipe way back then! I would have taken all they could carry to me and stashed them in the freezer for this one.
What You Need:
- 8 C cubed day-old (unfrosted) cinnamon rolls
- 4 eggs
- 2 C milk
- 1/4 C sugar
- 1/4 C butter (melted)
- 1/2 tsp vanilla extract
- 1/4 tsp ground nutmeg
- 1 C raisins
What To Do:
- Place cinnamon rolls in 3-quart slow cooker.
- In a separate bowl, combine the eggs, milk, sugar, butter, vanilla, and nutmeg and beat until smooth.
- Stir the raisins into the mixture.
- Pour over cinnamon roll cubes and stir gently.
- Cover and cook on low for 3 hours or until a knife comes out clean.
Serve this one up nice and warm, maybe with a scoop of your favorite ice cream on the top. If you time it right, this would be scrumptious as dessert after dinner with friends.
