
Whether you're a Workerette juggling a job outside the home, an at-home mom, a work-at-home mom or all of the above *yikes!*, you've probably wondered if a slow cooker would be useful for you. I'm personally learning that the answer is a resounding YES! Even if you aren't a mom (or perhaps, are a gramma or great-gramma), planning ahead can only be a good thing. It makes the budget a little less likely to break, the days a little more efficient, and with recipes like the ones these ladies are sharing, it can make dinner healthier and/or tastier!
This week let's go Moroccan and try on a spiced chicken stew for size. There are lots of ingredients, but just a little work for this recipe. You might want to pick up some couscous to serve it on!
What You Need:
- 2 lbs boneless, skinless chicken breast halves (cut into bite-sized pieces)
- 1 C green olives
- 3/4 C reduced-sodium chicken broth
- 1/2 medium onion (sliced)
- 1 T bottled chopped ginger
- 1 T bottled lemon juice
- 2 tsp garam masala
- 2 tsp bottled crushed garlic
- 1 tsp salt-free lemon pepper
- 1/2 tsp ground turmeric
What To Do:
- Stir all ingredients together until completely combined in a 4-quart slow cooker.
- Cover and cook on low for 3-5 hours.
- Serve with your cooked couscous. SO EASY!
