
Whether you're a Workerette juggling a job outside the home, an at-home mom, a work-at-home mom or all of the above *yikes!*, you've probably wondered if a slow cooker would be useful for you. I'm personally learning that the answer is a resounding YES! Even if you aren't a mom (or perhaps, are a gramma or great-gramma), planning ahead can only be a good thing. It makes the budget a little less likely to break, the days a little more efficient, and with recipes like the ones these ladies are sharing, it can make dinner healthier and/or tastier!
This week I guess I'm feeling fruity - here's a quick and easy recipe for making a fruit compote with a tropical touch. Please note there's alcohol in this recipe, so check the recipe out ahead of time in case you want to make substitutions.
What You Need:
- 1 - 16 oz bag frozen mango chunks
- 1- 16 oz bag frozen pineapple chunks
- 1 - 6 oz bag dried fruit mix (with pineapple, mango, and papaya)
- 1/2 C shredded coconut
- 3/4 C mango nectar
- 1/4 C packed brown sugar
- 1/4 C spiced rum
- 1 - 0.74 oz packet of spiced cider mix
What To Do:
- Stir together the mango, pineapple, fruit mix and coconut in a 4-quart slow cooker until completely combined.
- Stir together mango nectar, brown sugar, rum and cider mix in a separate bowl.
- Pour liquid mixture over fruit and stir well to combine.
- Cover and cook on high for 3-4 hours.
Serve garnished with mint or additional coconut if desired. Might be tasty over vanilla ice cream too!
