
This one speaks for itself, gals. Ten minutes of prep time, no cooking, and plenty of spice to tempt your tastebuds. Go with the Eden Organic version of the soy beans, diced tomatoes, and soy sauce, as well as organic produce if you can get your hands on it, and you're looking at one healthy, fast salsa to devour.
Here's the, uh, "scoop":
What You Need:
- 1 can black soy beans, drained
- 1 can diced tomatoes with green chilies, drained
- 1/2 C red onion, diced
- 3 T freshly squeezed lime juice
- 2 tsp shoyu soy sauce
- 1/2 C fresh cilantro, chopped
- 1/4 tsp ground cumin
- 1 T green onion, chopped
What To Do:
- Combine all ingredients in a bowl.
- Mix and add extra lime juice and/or shoyu to taste.
- Serve with your favorite tortilla chips.
How easy is that? Hmmm - perfect for football season, actually. Just don't tell my hubby's pals how healthy this one is, okay?
