
Quick - what's for dinner tomorrow night? ![]()
If you haven't gotten on board with doing your own Monday menu plans, I can make life a little easier with this quick and tasty recipe that I actually *gasp!* came up with myself. Originally I started out making a simple baked chicken dinner with lemon-pepper to add some flavor, but I happened to have some other items on hand that lent a lot more to the plate instead. Thankfully my daughter even went for it, since it was chicken. One more quick and easy meal up your sleeve, and it only requires five ingredients - if you count the spices!
What You Need:
- Two chicken breasts (boneless, skinless)
- One can of diced tomatoes, partially drained (you want to keep about half of the liquid)
- 2 - 3 T feta cheese
- lemon-pepper seasoning *optional*
- dried basil *optional*
What To Do:
- Preheat oven to 375 degrees.
- Lightly spray a baking dish with non-stick spray. Sprinkle with a light coat of lemon-pepper (if using). Place chicken breasts in dish.
- Bake at 375 degrees for 30 minutes.
- Remove from oven; cover chicken breasts with diced tomatoes and canned liquid.
- Return to oven for 5 - 10 minutes (just long enough to heat the tomatoes and allow the tomato juice to soak into the chicken breasts a bit).
- Remove dish from oven and place on serving plates.
- Top with a tablespoon or so of feta cheese (more if you like) and a sprinkling of basil.
This would really make an amazing meal with a green salad and a nice crusty bread or whole grain spaghetti. Hits all the food groups that way too! I think you may see it on the upcoming Menu Plan. ;-)

Yum! Sounds great! Lemon-pepper chicken is one of my faves!! Now, if I can just get the tomato past Doyle! Heh heh. ;)
