
Has cold and flu season hit your house yet? My husband got his mandatory flu immunization last week - now I have to find out if my doctor recommends it for the kids and me. I have a bad feeling because of my son (almost 4 months old) it's going to be strongly advised. Hopefully they'll have the nasal spray for my daughter and me. (Can you tell I have a "thing" about needles?)
Anywho, for those of you who seek comfort this time of year in a nice big bowl of chicken soup, here's a slightly different take on the old favorite. Whether you're sick or not, this is nice on a blustery day - and it is sooo fast.
What You Need:
- 2 C water
- 1 - 3 oz package ramen noodle mix, chicken flavor
- 2 C cut-up cooked chicken (rotisserie chicken would be handy!)
- 2 medium stalks of bok choy (with leaves), cut into 1/4 in. pieces
- 1 medium carrot, sliced (about 1/2 C)
- 1 tsp sesame oil (optional)
What To Do:
- Pour water into 3-quart saucepan and bring to a boil.
- Break block of noodles - hold aside seasoning packet.
- Stir noodles, chicken, bok choy and carrot into water.
- Bring back to a boil; reduce heat. Let simmer uncovered for 3 minutes, stirring occasionally.
- Stir in seasoning packet contents and sesame oil, if using.
Yummmm.
Don't forget to check Walgreens, CVS, and RiteAid if you need to stock up on cold and flu remedies. I got some great deals this past weekend at Walgreens and we are all stocked up for a while!
