
Looking for something that you can pull together for lunch or dinner in a jiffy? Gyros may be the way to go. I spotted a recipe in the October 2007 issue of Parents magazine that I decided to put on my menu plan for this week. They claim this takes 10 minutes; we'll see!
Here's the recipe - my adaptations are marked with an asterisk. Play with it to make the gyros fit into your needs or the taste preferences of your family. You can hit most of your food groups with this one, even!
What You Need:
- 1 pound beef stir-fry strips
- 2 tsp Greek seasoning
- 1 T vegetable oil
- 6 soft pita breads, warmed
- 1 C grape tomatoes*
- 1 C thin strips cucumber
- 1 C thin strips red bell pepper*
- 1/2 C sliced fresh mushrooms*
- 1/2 C crumbled feta cheese
- 1/2 C fat-free* ranch dressing
What To Do:
- Cut beef into small pieces, if needed, and toss with Greek seasoning.
- Heat oil over medium high heat in a large skillet. Add the seasoned beef, half at a time, and cook for 2 - 3 minutes (until browned). Stir while cooking.
- Divide beef and place in warmed pitas.
- Top with vegetables and feta.
- Drizzle ranch dressing over the filled gyros.
