
Whether you're a Workerette juggling a job outside the home, an at-home mom, a work-at-home mom or all of the above *yikes!*, you've probably wondered if a slow cooker would be useful for you. I'm personally learning that the answer is a resounding YES!
Even if you aren't a mom (or perhaps, are a gramma or great-gramma), planning ahead can only be a good thing. It makes the budget a little less likely to break, the days a little more efficient, and with recipes like the ones these ladies are sharing, it can make dinner 
Here's what struck my fancy for the week: Chicken Jambalaya, from a recipe I found in Fitness magazine. Yummmmmm. Spicy, tasty, healthy. Who could ask for more?
What You Need:
- 8 oz skinless, boneless chicken breast halves
- 1 - 16 oz package of frozen bell peppers & onions
- 8 oz smoked turkey sausage (halved lengthwise & cut into 1/2" slices)
- 2 C water
- 1 - 14.5 oz can diced tomatoes, with jalapenos (undrained)
- 1 - 8 oz package of jambalaya rice mix
What To Do:
- Cut the chicken into 1/2" strips.
- Place the frozen veggies in a 3.5 - 4 quart slow cooker.
- Top with chicken strips and turkey sausage.
- Add the water, undrained tomatoes, and the seasoning packet from the rice.
- Cover and cook on hig for 2.5 - 3 hours (or on low for 5 - 6 hours).
- Stir in rice; recover and cook for 45 minutes. (If using low setting, switch to high for this time period.)
I think I'll be adding this to the menu plan sometime in March. It seems like the perfect thing to warm up with for dinner on a rainy night.

this sounds so tasty! I made jambalaya for the first time this year, too. I didn't know how much I liked it, and am looking forward to trying it again. Thank you for sharing your recipe.
