
Whether you're a Workerette juggling a job outside the home, an at-home mom, a work-at-home mom or all of the above *yikes!*, you've probably wondered if a slow cooker would be useful for you. I'm personally learning that the answer is a resounding YES!
Even if you aren't a mom (or perhaps, are a gramma or great-gramma), planning ahead can only be a good thing. It makes the budget a little less likely to break, the days a little more efficient, and with recipes like the ones these ladies are sharing, it can make dinner 
Those of you who have ham for Easter may be looking for something a little different for a side dish this year; this sweet potato dish may fit the bill. Sounds tasty to me, and sweet potatoes are chock full of good stuff!
What You Need:
- 4 eggs
- 1 C milk
- 1/2 C butter (softened)
- 6 - 6.5 C mashed sweet potatoes (without added milk or butter)
- 1 tsp vanilla extract
- 1 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp lemon extract
- 1 - 8 oz can of drained sliced pineapple
- 1/4 C chopped pecans
What To Do:
- Mix the first nine items in a large bowl.
- Transfer mixture to 3-quart slow cooker.
- Top with pineapple and pecans.
- Cover and cook for 4 - 5 hours on low heat (or until cooking thermometer reads 160 degrees).
This one makes a whopper of 12-14 servings - it'd be great for those church brunches or big family Easter dinners!

what a great sounding recipe for sweet potatoes. I love them, and adore the idea of adding pecans. very cool.
