Slow Cooking Thursday: Feeling Like Thai Food?

Whether you're a Workerette juggling a job outside the home, an at-home mom, a work-at-home mom or all of the above *yikes!*, you've probably wondered if a slow cooker would be useful for you.  I'm personally learning that the answer is a resounding YES!

Even if you aren't a mom (or perhaps, are a gramma or great-gramma), planning ahead can only be a good thing.  It makes the budget a little less likely to break, the days a little more efficient, and with recipes like the ones these ladies are sharing, it can make dinner healthier and/or tastier!

This week I felt like going a little more exotic with ye olde Crock Pot, so here's a little something adapted from a Fitness magazine recipe: Thai-Style Coconut Chicken Soup. 

What You Need:

  • 1 lb. boneless, skinless chicken breasts, cut into 3/4" pieces
  • 4 C reduced-sodium chicken broth (go organic if you can - I like Trader Joe's version)
  • 1 C carrots (about 2 medium), bias-sliced
  • 1 large onion, chopped (about 1 C)
  • 2 T grated fresh ginger
  • 1 tsp fine shredded lemon peel
  • 1/4 tsp crushed red pepper
  • 3 garlic cloves, minced
  • 1 - 15 oz can of unsweetened light coconut milk (look in the "ethnic foods" aisle or at an Asian market)
  • 2 medium red or yellow bell peppers, cut into 1/2" pieces
  • 2- 6 oz cans of button mushrooms, drained
  • 1/4 C snipped fresh cilantro
  • 1/3 C chopped roasted peanuts (OPTIONAL; do not use if you have allergy concerns, of course!)

What To Do:

  • Place chicken pieces in a 3.5 - 4 quart slow cooker.
  • Pour on broth. 
  • Add carrots, onion, ginger, lemon peel, crushed red pepper, and garlic; stir together.
  • Cover and cook for 5 to 6 hours on low OR 2.5 to 3 hours on high.
  • Uncover and skim off fat.
  • Stir in coconut milk, peppers, mushrooms, and cilantro.
  • Replace cover and let stand for 10 minutes.
  • Garnish each serving with a sprinkle of peanuts, if using.

I say this one would be tasty with some steamed rice or some thick, doughy rolls.  What do you think?
